Ingredients

  • 2 medium-sized beets
  • 1 can chickpeas (drained and rinsed)
  • ¼ cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove (peeled)
  • ½ teaspoon salt
  • ¼ teaspoon cumin
  • Water as needed
  • Olive oil for drizzling
  • Whole chickpeas for garnish
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and wrap the beets in foil, then roast for 40-50 minutes until tender. Let cool, peel, and chop.
  2. In a food processor, blend the roasted beets, chickpeas, tahini, olive oil, lemon juice, garlic, salt, and cumin until smooth.
  3. If too thick, add water gradually until desired consistency is reached.
  4. Spoon the hummus into small molds or ramekins, cover with plastic wrap, and refrigerate for 30 minutes.
  5. Garnish with olive oil, chickpeas, and herbs before serving.
