Ingredients

- 2 medium-sized beets
- 1 can chickpeas (drained and rinsed)
- ¼ cup tahini
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 garlic clove (peeled)
- ½ teaspoon salt
- ¼ teaspoon cumin
- Water as needed
- Olive oil for drizzling
- Whole chickpeas for garnish
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Preheat the oven to 400°F (200°C). Wash and wrap the beets in foil, then roast for 40-50 minutes until tender. Let cool, peel, and chop.
- In a food processor, blend the roasted beets, chickpeas, tahini, olive oil, lemon juice, garlic, salt, and cumin until smooth.
- If too thick, add water gradually until desired consistency is reached.
- Spoon the hummus into small molds or ramekins, cover with plastic wrap, and refrigerate for 30 minutes.
- Garnish with olive oil, chickpeas, and herbs before serving.
Notes
Adjust flavors to taste during blending. Use roasted garlic for a milder flavor. Ensure to chill for enhanced taste and texture.
