Ingredients
4 cups carrots, peeled and sliced
1 cup cranberries, fresh or dried
2 tablespoons olive oil
1 tablespoon honey or maple syrup
Salt and pepper to taste
2 cups mixed greens, optional
1/4 cup chopped nuts, eg pecans or walnuts, optional
Feta cheese, optional

Instructions
Preheat the oven to 400°F (200°C).
Toss the sliced carrots with olive oil, honey, salt, and pepper on a baking sheet.
Roast in the oven for 25-30 minutes until caramelized and tender.
In a large bowl, combine the roasted carrots, cranberries, and mixed greens if using. Toss gently.
Top with chopped nuts and feta cheese if desired.
Serve warm or at room temperature.
