A festive salad featuring roasted carrots and cranberries, balancing sweet, tart, and crunchy flavors.


Ingredients

  • 4 cups carrots, peeled and sliced
  • 1 cup cranberries, fresh or dried
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste
  • 2 cups mixed greens, optional
  • 1/4 cup chopped nuts, eg pecans or walnuts, optional
  • Feta cheese, optional

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sliced carrots with olive oil, honey, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes until caramelized and tender.
  4. In a large bowl, combine the roasted carrots, cranberries, and mixed greens if using. Toss gently.
  5. Top with chopped nuts and feta cheese if desired.
  6. Serve warm or at room temperature.

Notes

Feel free to substitute ingredients and use your favorite nuts or cheeses. This salad can also be made vegan by skipping the feta and using maple syrup instead of honey.
