- 4 chicken breasts
- 1 cup mozzarella cheese, shredded
- 1 cup fresh spinach
- 1 cup roasted red peppers, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Combine mozzarella cheese, spinach, and roasted red peppers in a bowl. Season lightly with salt and pepper.
- Cut a pocket in each chicken breast and season the inside and outside with salt, pepper, garlic powder, and Italian seasoning.
- Stuff each chicken breast with the filling, securing with toothpicks if necessary.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3–4 minutes on each side until golden brown.
- Transfer to a baking dish and bake for 20–25 minutes until cooked through, reaching an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before slicing and serving.
Notes
For best results, don’t overstuff the chicken and ensure even thickness for cooking. Let the chicken rest before slicing to retain juices.
