Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the sweet potato cubes with olive oil, honey, ground cinnamon, and salt. Toss well to ensure the sweet potatoes are evenly coated.
  3. Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
  5. Once roasted, remove the sweet potatoes from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley for a pop of color.
