  • 45 Bone-In Chicken Thighs
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsps Fresh Rosemary, chopped
  • 1 Red Onion, sliced
  • 12 Honeycrisp Apples, sliced
  • 4 tbsps Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Wine
  • 2 tbsps Dijon Mustard
  • 3 cloves Garlic, minced
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, and chopped rosemary.
  3. In a hot, oven-safe skillet, sear the chicken on both sides until golden brown.
  4. Add the sliced red onion and honeycrisp apples around the chicken in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  6. Remove the chicken and apples from the pan and set aside.
  7. On the stovetop, add butter, apple cider, chicken broth (or white wine), Dijon mustard, and minced garlic to the skillet.
  8. Whisk the sauce together and cook it until it begins to thicken.
  9. Return the chicken and apples to the pan, spoon the sauce over them, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat gently, adding broth or water to the sauce if necessary.
