A tender, fragrant beef roast perfumed with garlic and fresh rosemary, perfect for cozy dinners.
Ingredients

- 2–3 pounds of beef roast
- 4 cloves of garlic, minced
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 1 onion, chopped
- 1 cup beef broth
- Salt and pepper to taste
- Optional: vegetables like carrots and potatoes
Instructions
- Pat the beef roast dry with paper towels and season generously with salt and pepper. Refrigerate if possible for a few hours.
- Heat a skillet over medium-high heat, add oil, and sear the roast on all sides until brown, about 2–3 minutes per side.
- Place chopped onion and minced garlic in the bottom of a crockpot.
- Put the seared roast on top of the onions in the crockpot, crust side up.
- Sprinkle chopped rosemary over the roast.
- Pour beef broth around the roast without rinsing off the rosemary.
- If using, chop and add carrots and potatoes around the roast.
- Cover and slow-cook on low for 8 hours or high for 4–5 hours until tender.
- Let the roast rest for 10–15 minutes before slicing or shredding. Serve with vegetables and cooking juices.
Notes
Searing before slow cooking enhances flavor; feel free to substitute part of the broth with red wine for added richness.
