- 4 large eggs, at room temperature
- 2 tsp vanilla extract
- 1 and 1/2 tsp corn starch
- 3/4 cup full-fat sour cream, at room temperature (180 grams)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 cup all-purpose flour (33 grams)
- 1/2 cup old-fashioned whole rolled oats (48 grams)
- 1/4 cup brown sugar, packed (55 grams)
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup cold salted butter, cubed (57 grams)
- 1 cup granulated sugar (210 grams)
- 6 tbsp salted butter, cubed (85 grams)
- 1/2 cup + 1 tbsp heavy cream (135 grams)

Instructions
- Make the Apple Filling: Combine apples and other filling ingredients in a pan; cook for 8-14 minutes until tender. Thicken with cornstarch and water if necessary.
- Make the Crust: Preheat the oven to 350°F (175°C). Mix crust ingredients, press into a springform pan, and bake for 10 minutes.
- Make the Cheesecake: Beat cream cheese until creamy, add sugar, incorporate eggs one at a time, then mix in vanilla, corn starch, sour cream, and spices. Layer the apple filling in the crust and pour remaining batter on top.
- Prep Water Bath: Set cheesecake in the oven with boiling water in a roasting pan below.
- Bake: Bake for 90-110 minutes until set. Cool in the oven for 1 hour.
- Chill: Cool completely at room temperature, then refrigerate for at least 6 hours before serving.
- Make Crumble Topping: Mix dry ingredients, cut in cold butter, bake until golden.
- Make Salted Caramel Sauce: Combine ingredients and cook until smooth, then cool.
- Assemble: Top cheesecake with apple topping, crumble, and caramel sauce.
- Serve: Slice, enjoy, and store leftovers in the refrigerator.
