- 1 pound smoked beef sausage, sliced into 1/2-inch pieces
- 1 1/2 pounds baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bell pepper, sliced (any color)
- 1 cup fresh spinach (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1/2 cup chicken or vegetable broth
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sausage and cook for 6-8 minutes until browned. Remove and set aside.
- In the same skillet, add the potatoes in a single layer and cook undisturbed for 5-7 minutes. Stir and cook for another 5-7 minutes until browned.
- Reduce heat to medium-low, add 1/4 cup broth, and cover to steam for 8-10 minutes until tender.
- Add the onion and bell pepper to the skillet and sauté for 5-7 minutes until softened.
- Add garlic, smoked paprika, Italian seasoning, salt, and black pepper; cook for 30-60 seconds.
- Stir everything together, return the sausage, and add the remaining broth, scraping the bottom of the pan.
- Simmer uncovered for another 5-7 minutes to meld flavors and reduce liquid.
- If desired, stir in spinach during the last 2 minutes of cooking and garnish with parsley before serving.
Notes
For extra flavor, use a mix of colored bell peppers. Adjust seasonings to taste.
