A comforting and hearty sausage potato soup that’s perfect for chilly days.
Ingredients

- 1 lb sausage (Italian or smoked)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded extra-sharp cheddar cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, brown the sausage over medium heat, breaking it up as it cooks. Remove and set aside.
- In the same pot, add onion and sauté until translucent. Add garlic and cook for an additional minute.
- Add diced potatoes and chicken broth; bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in heavy cream and cooked sausage; cook until heated through.
- Check seasoning, adding salt and pepper as needed.
- Stir in cheddar cheese until melted and smooth.
- Serve hot, garnished with chopped parsley.
Notes
For a thicker soup, mash some of the potatoes with a fork before stirring in the cheese. You can also swap sausage for mushrooms or beans for a vegetarian option.
