Ingredients

  • 2.5 cups Homemade Stuffing
  • 0.5 pound hot Italian beef sausage
  • 0.5 pound mild Italian beef sausage
  • Sea salt and pepper to taste
  • 0.5 cup shredded cheddar cheese
  • 1/3 cup minced dried cranberries
  • 2 beaten eggs
  • 1/4 to 1/2 cup chicken broth
  • 1 cup cranberry sauce (homemade or canned WHOLE BERRY)
  • 1/4 cup orange juice
  • Pinch of sea salt

Instructions

  1. Brown the hot and mild Italian beef sausages in a large skillet over medium-high heat, breaking apart into crumbles, then drain excess fat.
  2. In a bowl, combine cooked sausage with stuffing, cheddar cheese, cranberries, beaten eggs, and chicken broth. Season with salt and pepper and mix well.
  3. Preheat oven to 375°F (190°C) and prepare a baking sheet with parchment paper. Roll the stuffing mixture into 1.5-inch balls and place on the baking sheet.
  4. Bake for 25-30 minutes, rotating halfway through until golden brown and firm to touch.
  5. Meanwhile, prepare the dipping sauce by combining cranberry sauce, orange juice, and a pinch of salt in a saucepan. Simmer for 5-7 minutes until warmed through.
  6. Once baked, let the bites rest for 5 minutes before serving with the dipping sauce.
