- 2.5 cups Homemade Stuffing
- 0.5 pound hot Italian beef sausage
- 0.5 pound mild Italian beef sausage
- Sea salt and pepper to taste
- 0.5 cup shredded cheddar cheese
- 1/3 cup minced dried cranberries
- 2 beaten eggs
- 1/4 to 1/2 cup chicken broth
- 1 cup cranberry sauce (homemade or canned WHOLE BERRY)
- 1/4 cup orange juice
- Pinch of sea salt
Instructions
- Brown the hot and mild Italian beef sausages in a large skillet over medium-high heat, breaking apart into crumbles, then drain excess fat.
- In a bowl, combine cooked sausage with stuffing, cheddar cheese, cranberries, beaten eggs, and chicken broth. Season with salt and pepper and mix well.
- Preheat oven to 375°F (190°C) and prepare a baking sheet with parchment paper. Roll the stuffing mixture into 1.5-inch balls and place on the baking sheet.
- Bake for 25-30 minutes, rotating halfway through until golden brown and firm to touch.
- Meanwhile, prepare the dipping sauce by combining cranberry sauce, orange juice, and a pinch of salt in a saucepan. Simmer for 5-7 minutes until warmed through.
- Once baked, let the bites rest for 5 minutes before serving with the dipping sauce.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen for up to 2 months.
