Description

A warm and comforting soup combining sausage, sweet potatoes, and spinach in a creamy broth.


Ingredients

  • 1 pound sausage
  • 2 cups sweet potatoes, diced
  • 2 cups spinach, chopped
  • 3 cloves garlic, minced
  • 15 ounces three-cheese tortellini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the sausage over medium heat until browned.
  2. Add the diced sweet potatoes and cook for about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the tortellini and cook according to package instructions.
  6. Once the tortellini is cooked, stir in the spinach and heavy cream.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

For a bit of spice, use Italian sausage with fennel or add red pepper flakes. This soup can also be made vegetarian by using vegetable broth and more veggies.
