- 1 pound Italian sausage
- 1 package (9 ounces) three-cheese tortellini
- 2 cups fresh spinach
- 2 medium sweet potatoes, peeled and diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
- Stir in the garlic and sweet potatoes, cooking until the sweet potatoes are tender.
- Pour in the vegetable broth and bring to a boil.
- Add the tortellini and cook according to package instructions.
- Reduce heat and stir in the spinach and heavy cream.
- Season with salt and pepper to taste.
- Simmer for an additional 5 minutes before serving.
Notes
Serve warm with a sprinkle of Parmesan cheese and some crusty bread on the side. Leftovers can be stored in an airtight container for up to three days in the fridge or frozen for up to three months.
