- 1 package three-cheese tortellini
- 2 medium sweet potatoes, peeled and diced
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat and cook the sausage until browned.
- Add minced garlic and diced sweet potatoes; cook until tender.
- Pour in the broth and bring to a boil.
- Stir in the tortellini and cook according to package instructions.
- Add spinach and heavy cream, stirring until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot.
