A puffy and savory dish that combines the flavors of cheddar cheese and beef bacon, perfect for breakfast or dinner.

- 4 large eggs at room temperature
- 1/2 cup whole milk warmed slightly
- 1/2 cup all-purpose flour
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon dry mustard powder (optional)
- A tiny pinch of cayenne pepper (optional)
- 6–8 slices beef bacon cut into 1/2-inch pieces
- 1 small yellow onion or 2 shallots finely diced
- 1 cup sharp cheddar cheese freshly grated (about 4 ounces)
- 2 tablespoons fresh chives finely chopped
- 2 tablespoons unsalted butter for the skillet
Instructions
- Preheat your oven to 425°F (220°C) with a cast iron skillet inside.
- Place 2 tablespoons of unsalted butter in the skillet and heat in the oven until melted (about 5 to 7 minutes).
- In a separate skillet, cook the beef bacon over medium heat until crispy (about 7 to 10 minutes). Transfer to a paper towel-lined plate.
- Sauté the diced onion or shallots in the reserved bacon fat until soft and translucent (about 5 to 8 minutes).
- In a mixing bowl, whisk together the eggs, warmed milk, salt, pepper, mustard powder, and cayenne until frothy (1 to 2 minutes).
- Gradually add the flour until just combined, avoiding overmixing.
- Let the batter rest covered for 10 to 30 minutes.
- Remove the hot skillet from the oven, swirl melted butter, and pour in the batter.
- Sprinkle one third each of the cheddar, bacon, and sautéed onions on top.
- Bake for 18 to 22 minutes without opening the oven door for the first 15 minutes.
- Once puffed and golden, add remaining cheddar, bacon, and onions, then garnish with chives.
- Serve immediately while warm.
Notes
Serve with a green salad or fresh fruit for contrast. This recipe is flexible; consider adding veggies or using different cheeses.
