Description Golden, flaky sausage rolls packed with caramelized onions and a touch of thyme, inspired by classic French onion soup.

Ingredients

  • 1 pound sausage meat (pork, chicken, or plant-based)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter or olive oil
  • 1 teaspoon sugar
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried)
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • ½ cup shredded Gruyère or Swiss cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Melt butter in a skillet over medium-low heat. Add onions, sugar, salt, and thyme; cook for 25–30 minutes until deeply caramelized.
  3. Stir in Worcestershire sauce and cook for 1 minute. Allow to cool slightly.
  4. In a bowl, mix sausage meat with cooled onions (add cheese if using). Taste and adjust seasoning.
  5. Roll out puff pastry and cut in half to make 2 rectangles.
  6. Shape filling into logs along one long edge of each pastry; brush far edge with egg wash.
  7. Roll pastry tightly and place seam-side down on the prepared baking sheet. Cut each log into 4–6 rolls and vent with a knife.
  8. Brush rolls generously with egg wash. Bake for 22–26 minutes until golden.
  9. Let rolls rest for 5 minutes, garnish with parsley and serve warm.
