Description
Golden, flaky sausage rolls packed with caramelized onions and a touch of thyme, inspired by classic French onion soup.

- 1 pound sausage meat (pork, chicken, or plant-based)
- 2 large yellow onions, thinly sliced
- 2 tablespoons butter or olive oil
- 1 teaspoon sugar
- 1 teaspoon fresh thyme leaves (or ½ tsp dried)
- 1 tablespoon Worcestershire sauce
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- ½ cup shredded Gruyère or Swiss cheese (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Melt butter in a skillet over medium-low heat. Add onions, sugar, salt, and thyme; cook for 25–30 minutes until deeply caramelized.
- Stir in Worcestershire sauce and cook for 1 minute. Allow to cool slightly.
- In a bowl, mix sausage meat with cooled onions (add cheese if using). Taste and adjust seasoning.
- Roll out puff pastry and cut in half to make 2 rectangles.
- Shape filling into logs along one long edge of each pastry; brush far edge with egg wash.
- Roll pastry tightly and place seam-side down on the prepared baking sheet. Cut each log into 4–6 rolls and vent with a knife.
- Brush rolls generously with egg wash. Bake for 22–26 minutes until golden.
- Let rolls rest for 5 minutes, garnish with parsley and serve warm.
Notes
Cool caramelized onions completely to prevent soggy pastry. Can be prepared in advance and baked later.
