These Mini Meatloaves are a comforting and easy weeknight dinner, paired with crispy roasted potatoes and tender asparagus. Baked on a single sheet pan, this balanced meal is both hearty and wholesome with minimal cleanup.

- For the Mini Meatloaves:
- 1½ pounds lean ground beef (90% lean)
- 2 large eggs, lightly beaten
- 1 cup tomato juice
- ¾ cup quick-cooking oats
- ¼ cup finely chopped onion
- ½ teaspoon salt
- ¼ cup ketchup
- 3 tablespoons brown sugar
- 1 teaspoon prepared mustard
- ¼ teaspoon ground nutmeg
- For the Roasted Potatoes:
- 3 large potatoes, peeled and chopped into ½-inch cubes
- 3 tablespoons olive oil, divided
- ½ teaspoon garlic salt, divided
- ¼ teaspoon pepper, divided
- Optional:
- 1 pound asparagus or green beans, trimmed and halved
Instructions
- Preheat oven: Set oven to 425°F (220°C).
- Make meatloaf mixture: In a large bowl, mix eggs, tomato juice, oats, onion, and salt. Add ground beef and gently combine without overworking.
- Shape and arrange: Form into six 4×2½-inch loaves and place on a rimmed baking sheet.
- Mix glaze: In a small bowl, stir together ketchup, brown sugar, mustard, and nutmeg. Brush over each meatloaf.
- Prepare potatoes: Toss chopped potatoes with 2 tbsp olive oil, ¼ tsp garlic salt, and ⅛ tsp pepper. Spread around the meatloaves on the pan.
- Bake first stage: Bake for 25 minutes.
- Prep asparagus: While baking, toss asparagus with 1 tbsp olive oil, ¼ tsp garlic salt, and ⅛ tsp pepper.
- Finish baking: Add asparagus to the pan. Continue baking 15–20 more minutes, or until loaves reach 160°F (71°C) and veggies are tender.
- Rest and serve: Let meatloaves rest 5 minutes before serving.
Notes
You can substitute green beans for asparagus, or use baby potatoes for quicker roasting. This recipe works well for meal prep — simply reheat in the oven or microwave.
