Description

A layered, hearty casserole combining ground beef, tender potatoes, and creamy mushroom soup for a comforting weeknight meal.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced
  • 1 onion, chopped
  • 1 cup cooked rice
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium-high heat, brown the ground beef and onions, seasoning with salt and pepper.
  3. Slice the potatoes thinly.
  4. In a large casserole dish, layer the sliced potatoes on the bottom.
  5. Spoon half of the beef mixture over the potato layer.
  6. Sprinkle rice evenly over the beef layer.
  7. Pour cream of mushroom soup over the rice.
  8. Add remaining beef mixture on top of the soup.
  9. Layer sliced potatoes on top; season and add cheese if desired.
  10. Cover with foil and bake for 1 hour, then uncover and bake for an additional 15 minutes.
  11. Let rest for a few minutes before serving.

Notes

For a lighter version, substitute half the ground beef with sautéed vegetables. Can be assembled up to 24 hours in advance.
