- 2 slices of bread
- 2 eggs
- 1/2 cup ricotta cheese
- Salt to taste
- Pepper to taste
- Olive oil
- Fresh herbs (optional, such as chives or parsley)
Instructions
- Toast the bread slices until golden brown.
- In a pan, heat a little olive oil over medium heat.
- Crack the eggs into the pan and cook to your liking (sunny-side up, scrambled, etc.).
- While the eggs are cooking, spread ricotta cheese evenly on the toasted bread.
- Place the cooked eggs on top of the ricotta toast.
- Season with salt, pepper, and sprinkle fresh herbs if desired.
- Serve warm.
