Description A bright, lively sauce made with lemon and capers that enhances fish, chicken, vegetables, or pasta in minutes.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 cup chicken broth or vegetable broth
  • 2 tablespoons fresh lemon juice (from about 1/2 a lemon)
  • 2 tablespoons capers, rinsed and drained
  • 1 teaspoon lemon zest
  • Salt and black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Melt the butter and sauté the garlic in a small saucepan or skillet over medium heat until fragrant, about 30 seconds to 1 minute.
  2. Pour in the broth and bring to a gentle simmer, cooking for 1 to 2 minutes.
  3. Reduce heat to low and stir in the lemon juice, lemon zest, and capers.
  4. Remove from heat, stir in the parsley, and season with salt and pepper to taste.
  5. Keep warm over low heat until ready to serve, or gently reheat just before serving.
