A bright and summery peach and tomato salad with crumbled feta and fresh herbs, brought together with a tangy homemade dressing—perfect for a light meal or side.


Ingredients

Salad:

  • 3 large peaches, ripe, pitted, and sliced into wedges
  • 1 pint cherry tomatoes, halved
  • ½ small shallot, thinly sliced
  • ½ cup feta cheese, crumbled (or vegan feta)
  • ~10 large leaves fresh basil, chopped
  • ~10 large leaves fresh mint, chopped

Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar (or white wine vinegar)
  • Juice from ½ a lemon
  • 1 tsp honey
  • ½ tsp garlic powder (or 2 minced garlic cloves)
  • Salt and pepper to taste

Instructions

  1. Make the Dressing: In a small bowl or jar, whisk together olive oil, vinegar, lemon juice, honey, garlic powder, salt, and pepper.
  2. Assemble the Salad: In a large bowl, combine sliced peaches, cherry tomatoes, shallots, feta, basil, and mint.
  3. Toss and Serve: Pour dressing over the salad. Gently toss until all ingredients are coated. Serve immediately or chill for 30 minutes.

Notes

For a vegan version, use maple syrup instead of honey and plant-based feta. Add arugula for more greens or toasted nuts for extra crunch.
