Description
A bright and summery peach and tomato salad with crumbled feta and fresh herbs, brought together with a tangy homemade dressing—perfect for a light meal or side.
Ingredients

Salad:
- 3 large peaches, ripe, pitted, and sliced into wedges
- 1 pint cherry tomatoes, halved
- ½ small shallot, thinly sliced
- ½ cup feta cheese, crumbled (or vegan feta)
- ~10 large leaves fresh basil, chopped
- ~10 large leaves fresh mint, chopped
Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar (or white wine vinegar)
- Juice from ½ a lemon
- 1 tsp honey
- ½ tsp garlic powder (or 2 minced garlic cloves)
- Salt and pepper to taste
Instructions
- Make the Dressing: In a small bowl or jar, whisk together olive oil, vinegar, lemon juice, honey, garlic powder, salt, and pepper.
- Assemble the Salad: In a large bowl, combine sliced peaches, cherry tomatoes, shallots, feta, basil, and mint.
- Toss and Serve: Pour dressing over the salad. Gently toss until all ingredients are coated. Serve immediately or chill for 30 minutes.
Notes
For a vegan version, use maple syrup instead of honey and plant-based feta. Add arugula for more greens or toasted nuts for extra crunch.
