- 1 pound fresh asparagus, washed and trimmed
- 2 tablespoons butter
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Optional: Lemon wedges for serving
Instructions
- Wash the asparagus thoroughly and pat dry. Trim the woody ends or cut into 1-2 inch pieces.
- Lightly spray the inside of the slow cooker insert with cooking spray.
- Melt the butter in a small bowl, then mix in the olive oil and minced garlic.
- Arrange the asparagus in an even layer in the slow cooker and drizzle the garlic butter over it. Toss to coat.
- Pour ½ cup of vegetable or chicken broth over the asparagus and season with salt and pepper.
- Cook on LOW for 1 ½ to 2 hours for crisp-tender asparagus, or 2 to 2 ½ hours for softer asparagus.
- Check for doneness and adjust cooking time if necessary.
- Once cooked, drizzle with lemon juice and toss gently before serving.
Notes
For best flavor, serve alongside grilled chicken, fish, or toss in pasta dishes. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
