- 4 boneless, skinless chicken breasts (about 1.5–2 pounds total)
- 1 cup balsamic vinegar
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Fresh herbs for garnish (parsley, basil, or rosemary)
Instructions
- In a medium bowl, whisk together 1 cup balsamic vinegar, 1/2 cup honey, 1/4 cup soy sauce, minced garlic, dried rosemary, dried thyme, salt, and pepper.
- Place the chicken breasts in a single layer in the slow cooker and pour the balsamic mixture evenly over the chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
- Remove the chicken and shred it if desired, or serve whole. For a thicker glaze, reduce the cooking liquid in a saucepan over medium heat.
- Garnish with fresh herbs before serving.
Notes
Leftover sauce can be used over roasted vegetables, rice, or in pasta. If the sauce is too thin, reduce it on the stove for a thicker consistency.
