- 4 boneless pork chops
- 1/2 cup balsamic vinegar
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil (for searing, optional)
Instructions
- Pat the pork chops dry with paper towels and season generously with salt and pepper on both sides.
- Optional: Sear the pork chops in olive oil over medium-high heat for 2–3 minutes per side until browned. Transfer to the slow cooker.
- In a bowl, whisk together balsamic vinegar, brown sugar, minced garlic, soy sauce, and thyme until cohesive.
- Place pork chops in a single layer in the slow cooker and pour the balsamic mixture over them, distributing garlic and brown sugar.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until tender.
- Optional: For a thicker glaze, remove chops and reduce the cooking liquid in a saucepan over medium heat for 5–10 minutes. Spoon over chops before serving.
- Serve with a garnish of fresh parsley or thyme if desired.
Notes
For best results, avoid lifting the lid frequently during cooking to maintain heat. Store leftovers in an airtight container.
