  • 2 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In the slow cooker, combine the beef, onion, garlic, ginger, curry powder, turmeric, and cumin.
  2. Add the coconut milk, diced tomatoes, and beef broth. Stir to combine.
  3. Season with salt and pepper.
  4. Cover and cook on low for 360-480 minutes (6-8 hours) or on high for 240-300 minutes (4-5 hours).
  5. Once cooked, serve hot, garnished with fresh cilantro. Enjoy with rice or naan.
