- 2 lbs beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In the slow cooker, combine the beef, onion, garlic, ginger, curry powder, turmeric, and cumin.
- Add the coconut milk, diced tomatoes, and beef broth. Stir to combine.
- Season with salt and pepper.
- Cover and cook on low for 360-480 minutes (6-8 hours) or on high for 240-300 minutes (4-5 hours).
- Once cooked, serve hot, garnished with fresh cilantro. Enjoy with rice or naan.
