- 2 lbs boneless skinless chicken breasts
- 2 Tbs dried ranch dressing mix (1 packet)
- 3/4 cup Buffalo wing sauce (divided plus more for serving)
- 8 Brioche hamburger buns
- Ranch dressing for serving
- Blue cheese crumbles for serving
Instructions
- Pat the chicken thoroughly dry with paper towels and place in a single layer at the bottom of the slow cooker.
- In a medium mixing bowl, whisk together 3/4 cup Buffalo wing sauce and the dried ranch dressing mix until smooth.
- Pour the sauce mixture evenly over the chicken breasts. Gently shift the chicken to ensure thorough coating.
- Secure the lid and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours until the chicken reaches 165°F (74°C) and shreds easily.
- Remove the chicken to a cutting board, shred into bite-sized pieces and return to the slow cooker, stirring to coat in the sauce.
- Let the chicken simmer on the WARM setting for an additional 15 to 30 minutes to absorb flavors.
- Toast the brioche buns and prepare desired toppings.
- Assemble the sandwiches with a generous portion of the shredded chicken and optional toppings, then serve immediately.
Notes
For less heat, cut the buffalo sauce in half and add honey. Leftovers can be stored for up to 4 days or frozen for up to 3 months.
