Description A creamy, comforting dish transforming humble cauliflower into an indulgent delight with cream cheese and Pepper Jack cheese.

Ingredients

  • 1 large head of cauliflower, cut into one -inch florets
  • 8 oz cream cheese
  • 1 cup whipping cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded Pepper Jack cheese
  • 4 slices cooked beef bacon, crumbled

Instructions

  1. Wash cauliflower under running water and cut into one-inch florets.
  2. In a microwave-safe bowl, combine cream cheese, whipping cream, butter, salt, and pepper. Heat gently until smooth.
  3. Place cauliflower in slow cooker, pour cream sauce over, and stir gently to coat. Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours.
  4. During the last 30 minutes, stir in shredded Pepper Jack cheese.
  5. Garnish with crumbled beef bacon before serving.
