- 1 large head of cauliflower, cut into one-inch florets
- 8 oz cream cheese
- 1 cup whipping cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded Pepper Jack cheese
- 4 slices cooked beef bacon, crumbled
Instructions
- Wash cauliflower under running water and cut into one-inch florets.
- In a microwave-safe bowl, combine cream cheese, whipping cream, butter, salt, and pepper. Heat gently until smooth.
- Place cauliflower in slow cooker, pour cream sauce over, and stir gently to coat. Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours.
- During the last 30 minutes, stir in shredded Pepper Jack cheese.
- Garnish with crumbled beef bacon before serving.
Notes
For a dairy-free version, consider using plant-based cream cheese and coconut milk.
