- 1 pound chicken breast, diced
- 2 medium sweet potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can coconut milk (14 oz)
- 2 tablespoons curry powder
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Prep the ingredients: Peel and dice the sweet potatoes into roughly 1-inch cubes. Dice the chicken breast, onion, and garlic.
- Layer the slow cooker: Place the diced chicken at the bottom, followed by sweet potatoes and diced onion. Scatter minced garlic over the top.
- Add the liquids and spices: Pour the coconut milk over and sprinkle curry powder, ground ginger, salt, and pepper. Stir gently.
- Slow cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours until chicken is cooked and sweet potatoes are tender.
- Finish and serve: Taste and adjust seasoning. Serve hot, garnished with fresh cilantro if desired.
Notes
For firmer sweet potatoes, reduce cooking time. Add lime or vinegar at the end for brightness.
