- 1 pound boneless, skinless chicken breasts
- 1 cup uncooked long-grain white rice
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a slow cooker, combine chicken breasts, rice, onion, carrots, celery, garlic, chicken broth, thyme, bay leaf, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Before serving, shred the chicken in the soup.
- Discard the bay leaf, and garnish with fresh parsley if desired.
Notes
If using brown rice, parboil it for 10 minutes before adding or increase the cook time and broth. For added flavor, sauté the onion, celery, and carrots before adding to the slow cooker.
