A hearty and comforting slow cooker chicken stew packed with tender chicken, root vegetables, and herbs. Perfect for cozy family meals.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into chunks
- 4 carrots, sliced
- 3 celery stalks, chopped
- 3 Yukon Gold potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 4 cups chicken broth
- 1 tbsp olive oil
- Optional: 1 cup peas or corn (added in the last 30 minutes)
Instructions
- Prep all ingredients by cutting the chicken and vegetables into bite-sized pieces.
- (Optional) Sear the chicken in olive oil over medium heat for 2–3 minutes per side.
- Layer ingredients in your slow cooker: carrots, celery, potatoes, onions on the bottom; chicken, garlic, herbs, salt, and pepper on top.
- Pour chicken broth over everything.
- Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- Add peas or corn in the final 30 minutes, if using.
- Taste and adjust seasoning before serving.
- For a thicker stew, stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) before serving.
Notes
Serve with warm bread or biscuits for a complete meal. Leftovers taste even better the next day.
