Description

A hearty and comforting slow cooker chicken stew packed with tender chicken, root vegetables, and herbs. Perfect for cozy family meals.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into chunks
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 3 Yukon Gold potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • Optional: 1 cup peas or corn (added in the last 30 minutes)

Instructions

  1. Prep all ingredients by cutting the chicken and vegetables into bite-sized pieces.
  2. (Optional) Sear the chicken in olive oil over medium heat for 2–3 minutes per side.
  3. Layer ingredients in your slow cooker: carrots, celery, potatoes, onions on the bottom; chicken, garlic, herbs, salt, and pepper on top.
  4. Pour chicken broth over everything.
  5. Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  6. Add peas or corn in the final 30 minutes, if using.
  7. Taste and adjust seasoning before serving.
  8. For a thicker stew, stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) before serving.

Notes

Serve with warm bread or biscuits for a complete meal. Leftovers taste even better the next day.
