- 2 lbs chicken breast
- 1 can (13.5 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon fresh basil (or 1 teaspoon dried basil)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Combine chicken, coconut milk, curry powder, basil, onion, and garlic in the slow cooker.
- Season with salt and pepper.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until the chicken is tender.
- Shred the chicken with two forks and mix well.
- Serve over cooked rice.
Notes
For freshness, store in an airtight container for up to 3–4 days, or freeze for up to 3 months. Reheat before serving.
