Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice (white or brown)
  • 4 cups chicken broth
  • 1 cup heavy cream or milk
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: fresh parsley for garnish

Instructions

  1. In the slow cooker, combine the shredded chicken, rice, chicken broth, onion, carrots, celery, garlic, thyme, salt, and pepper.
  2. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the rice is tender.
  4. About 30 minutes before serving, stir in the heavy cream or milk.
  5. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

For best texture, add rice and cream closer to cooking time and consider using pre-cooked rice.
