- 2 cups cooked chicken, shredded
- 1 cup rice (white or brown)
- 4 cups chicken broth
- 1 cup heavy cream or milk
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: fresh parsley for garnish
Instructions
- In the slow cooker, combine the shredded chicken, rice, chicken broth, onion, carrots, celery, garlic, thyme, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the rice is tender.
- About 30 minutes before serving, stir in the heavy cream or milk.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley if desired.
Notes
For best texture, add rice and cream closer to cooking time and consider using pre-cooked rice.
