Description

  • 6 bone-in, skin-on chicken thighs
  • 1 ½ teaspoons smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 pounds baby red potatoes, halved
  • ¼ cup white wine (or chicken broth)
  • ¼ cup chicken broth
  • 2 shallots, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 3 cups broccoli florets
  • ½ cup heavy cream
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Season the chicken: Rub chicken thighs with smoked paprika, salt, and pepper.
  2. Sear the chicken: In a cast iron skillet, melt butter and sear chicken on both sides (2–3 minutes per side) until golden. Remove and set aside.
  3. Layer ingredients in slow cooker: Place baby potatoes at the bottom of a 6-quart slow cooker. Add white wine, chicken broth, shallots, garlic, and thyme. Season lightly with salt and pepper.
  4. Add chicken: Place seared chicken thighs on top in a single layer.
  5. Slow cook: Cover and cook on LOW for 5–6 hours or HIGH for 3–3.5 hours, until chicken is fully cooked (165°F).
  6. Add broccoli: During the last 30 minutes of cooking, stir in broccoli florets.
  7. Make the cream sauce: In a small bowl, whisk heavy cream, lemon juice, and cornstarch. Stir into slow cooker and cook on HIGH for 10–15 minutes, until thickened.
  8. Serve: Plate the chicken with potatoes and broccoli, and spoon over the creamy garlic sauce.

Notes

You can substitute wine with extra broth. For added richness, top with shredded Parmesan before serving. Adjust salt to taste after cooking, especially if using salted broth.
