  • 2 tablespoons olive oil (plus more for searing)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 1 cup beef broth
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1/4 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Trim excess silver skin and fat from the beef tenderloin and dry it thoroughly with paper towels.
  2. Combine olive oil, garlic powder, salt, black pepper, rosemary, and sage in a bowl to create the herb rub. Rub it generously over the beef.
  3. Heat a large skillet over medium-high heat with olive oil and sear the tenderloin for 2-3 minutes on each side until browned.
  4. Pour beef broth into the bottom of the slow cooker.
  5. Transfer the seared tenderloin to the slow cooker, placing it in the broth.
  6. Cover and cook on low for 150-210 minutes or on high for 90-150 minutes, checking for doneness.
  7. Remove the beef and let it rest for 10-15 minutes covered with aluminum foil.
  8. Pour the cooking liquid through a sieve into a saucepan, discarding solids, and skim off fat.
  9. Melt butter in the saucepan, whisk in flour to form a roux, then gradually add the strained liquid and chicken/vegetable broth. Bring to a simmer and whisk until thickened.
  10. Stir in heavy cream and Dijon mustard, then add thyme and parsley, seasoning to taste.
  11. Slice the tenderloin against the grain and serve with the sauce.

Notes

Ensure the tenderloin is well-trimmed and dried before applying the herb rub for the best crust. Use fresh herbs for enhanced flavor.
