- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 can (14.5 oz) diced tomatoes
- Salt and pepper to taste
- Pasta or polenta for serving
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season pork chops with salt, pepper, oregano, and basil.
- Sear the pork chops in the skillet for about 2–3 minutes on each side until browned.
- Transfer the pork chops to the slow cooker.
- Add minced garlic and diced tomatoes on top.
- Cook on low for 6–8 hours or high for 3–4 hours.
- Serve over cooked pasta or polenta.
