Ingredients

  • 4 pork chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper to taste
  • Pasta or polenta for serving

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season pork chops with salt, pepper, oregano, and basil.
  3. Sear the pork chops in the skillet for about 2–3 minutes on each side until browned.
  4. Transfer the pork chops to the slow cooker.
  5. Add minced garlic and diced tomatoes on top.
  6. Cook on low for 6–8 hours or high for 3–4 hours.
  7. Serve over cooked pasta or polenta.

Notes

For best results, sear the pork chops to develop flavor. Adjust seasoning before serving.
