- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup rice
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- In a small bowl, mix together lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
- Place the chicken breasts in the slow cooker and pour the lemon herb mixture over them.
- Pour chicken broth into the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add rice to the slow cooker.
- Serve the chicken and rice together, garnished with fresh herbs.
Notes
Use freshly squeezed lemon juice for the best flavor. You can add vegetables like carrots or bell peppers for added nutrition.
