Ingredients

- 1 whole chicken or chicken pieces
- 2 lemons (juiced and zested)
- 4 garlic cloves (minced)
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- Salt and pepper to taste
- 1 cup chicken broth
- 2 cups rice
- 4 cups water
- Fresh herbs for garnish (optional)
Instructions
- In a bowl, mix lemon juice and zest, minced garlic, olive oil, chopped rosemary, and thyme. Season with salt and pepper.
- Place the chicken in the slow cooker and pour the lemon herb mixture over it.
- Add chicken broth to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
- In a separate pot, bring 4 cups of water to a boil. Add rice and cook according to package instructions.
- Serve the chicken over the fluffy rice and garnish with fresh herbs if desired.
Notes
For extra flavor, marinate the chicken in the lemon herb mixture for a couple of hours or overnight before cooking. You can also add vegetables like carrots or potatoes to the slow cooker for a complete meal.
