Ingredients

  • 1 whole chicken or chicken pieces
  • 2 lemons (juiced and zested)
  • 4 garlic cloves (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 cups rice
  • 4 cups water
  • Fresh herbs for garnish (optional)

Instructions

  1. In a bowl, mix lemon juice and zest, minced garlic, olive oil, chopped rosemary, and thyme. Season with salt and pepper.
  2. Place the chicken in the slow cooker and pour the lemon herb mixture over it.
  3. Add chicken broth to the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  5. In a separate pot, bring 4 cups of water to a boil. Add rice and cook according to package instructions.
  6. Serve the chicken over the fluffy rice and garnish with fresh herbs if desired.

Notes

For extra flavor, marinate the chicken in the lemon herb mixture for a couple of hours or overnight before cooking. You can also add vegetables like carrots or potatoes to the slow cooker for a complete meal.
