Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Place diced potatoes and chopped onion in the slow cooker.
  2. Pour in the chicken or vegetable broth.
  3. Cook on low for 360 minutes or high for 240 minutes until the potatoes are tender.
  4. Mash some of the potatoes with a fork or potato masher for a thicker texture.
  5. Stir in heavy cream, crumbled bacon, and shredded cheddar cheese.
  6. Season with salt and pepper to taste.
  7. Garnish with chives before serving.
