Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 2 tsp Tajin seasoning (plus more for topping)
  • 2 tsp chili powder
  • Kosher salt and pepper, to taste
  • 2 (15 oz) cans of corn kernels, drained
  • 1 (10 oz) can of Rotel tomatoes with green chiles
  • 1/3 cup sour cream
  • 1/2 cup plain Greek yogurt (or blended cottage cheese or mayo)
  • 1/2 cup chopped cilantro (plus more for garnish)
  • 1/2 cup crumbled cotija cheese
  • Optional toppings: hot sauce, crushed tortilla chips or Fritos, jalapeños

Instructions

  1. Add chicken, onion, and garlic to the slow cooker.
  2. Season with Tajin, chili powder, salt, and pepper.
  3. Cook on LOW for 6 hours.
  4. Shred chicken inside the cooker with two forks.
  5. Stir in corn, Rotel tomatoes, sour cream, and Greek yogurt.
  6. Mix in chopped cilantro.
  7. Continue cooking on LOW for 1–2 more hours, stirring occasionally.
  8. Top with extra Tajin, cotija cheese, and cilantro before serving.
  9. Add any optional toppings and enjoy!

Notes

This dish pairs well with warm tortillas or tortilla chips on the side. For extra zest, squeeze fresh lime juice over each serving.
