Description
A creamy and zesty slow cooker chicken dish made with Tajin seasoning, corn, Rotel tomatoes, Greek yogurt, and cotija cheese. Perfectly comforting with a hint of spice and tang.

- 2 lbs boneless, skinless chicken thighs or breasts
- 1 onion, diced
- 6 cloves garlic, minced
- 2 tsp Tajin seasoning (plus more for topping)
- 2 tsp chili powder
- Kosher salt and pepper, to taste
- 2 (15 oz) cans of corn kernels, drained
- 1 (10 oz) can of Rotel tomatoes with green chiles
- 1/3 cup sour cream
- 1/2 cup plain Greek yogurt (or blended cottage cheese or mayo)
- 1/2 cup chopped cilantro (plus more for garnish)
- 1/2 cup crumbled cotija cheese
- Optional toppings: hot sauce, crushed tortilla chips or Fritos, jalapeños
Instructions
- Add chicken, onion, and garlic to the slow cooker.
- Season with Tajin, chili powder, salt, and pepper.
- Cook on LOW for 6 hours.
- Shred chicken inside the cooker with two forks.
- Stir in corn, Rotel tomatoes, sour cream, and Greek yogurt.
- Mix in chopped cilantro.
- Continue cooking on LOW for 1–2 more hours, stirring occasionally.
- Top with extra Tajin, cotija cheese, and cilantro before serving.
- Add any optional toppings and enjoy!
Notes
This dish pairs well with warm tortillas or tortilla chips on the side. For extra zest, squeeze fresh lime juice over each serving.
