Description
A comforting one-pot meal with the flavors of classic cabbage rolls, made easy in the slow cooker.
Ingredients
Scale
- 1 pound ground beef
- 1 yellow onion, diced
- 1 small head green cabbage, chopped (about 6–8 cups)
- 14-ounce can petite diced tomatoes
- 6-ounce can tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 teaspoons dried parsley
- 1/4 teaspoon red pepper flakes
- 1 teaspoon kosher salt
- 1/2 cup water
Instructions
- Prepare the cabbage: Remove the core from the head of cabbage and chop it into bite-sized pieces.
- Brown the beef: In a large skillet, cook ground beef over medium-high heat until browned, about 6–8 minutes.
- Drain excess fat: Carefully remove excess grease from the skillet.
- Sauté the onion: Add diced onion to the skillet and cook until softened, about 3–4 minutes.
- Combine ingredients: In a bowl, mix beef and onion with diced tomatoes, tomato paste, Worcestershire sauce, thyme, parsley, red pepper flakes, salt, and water.
- Layer in the slow cooker: Spray inside of the slow cooker with cooking spray. Layer half of the cabbage, followed by half of the meat mixture, then repeat.
- Cook: Cover and cook on Low for 6–8 hours or on High for 3–4 hours until done.
- Serve: Adjust seasoning and serve hot.
Notes
For a vegetarian version, substitute ground beef with lentils or meatless crumbles. Store leftovers in an airtight container for up to 4 days.
