Description

A comforting and hearty split pea soup made effortlessly in a slow cooker, perfect for chilly days.


Ingredients

Scale
  • 1 cup split peas
  • 1 onion, chopped
  • 23 carrots, diced
  • 23 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas and set aside.
  2. In the slow cooker, combine the split peas, chopped onion, diced carrots, diced celery, vegetable broth, minced garlic, thyme, and bay leaf.
  3. Stir to combine and season with salt and pepper.
  4. Cover and cook on low for 6-8 hours, or until the peas are soft.
  5. Once done, remove the bay leaf, and use an immersion blender to puree the soup to your desired consistency if desired.
  6. Serve warm and enjoy!

Notes

For a thinner broth, add additional broth or water toward the end of cooking. Adjust seasonings before serving.
