Crispy, flavorful sweet potato wedges roasted to perfection with a smoky spice blend.

- 2 large sweet potatoes
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp chopped parsley
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Scrub the sweet potatoes well under running water and leave the skins on.
- Cut each sweet potato in half lengthwise, then slice each half into 3–4 wedges.
- In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper. Toss the wedges until evenly coated.
- Spread the wedges in a single layer on the prepared baking sheet, cut side down, and roast for 25–30 minutes, flipping halfway through.
- Remove from the oven, sprinkle with chopped parsley, and serve hot.
Notes
These wedges pair well with various dips or can be served as a base for grain bowls.
