- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 3 tablespoons sugar for topping
- 1 tablespoon cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, cream the sugar and butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until just combined.
- Pour the batter into the prepared loaf pan and smooth the top gently.
- Mix together the sugar and cinnamon for the topping and sprinkle over the batter.
- Bake for 50 to 60 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
You can substitute buttermilk with milk and lemon juice, use less sugar if desired, and add cinnamon chips or nuts for variation.
