Description

These bakery-style churro cookies are coated in cinnamon sugar, soft in the center, and optionally topped with a rich cinnamon brown sugar buttercream. Perfect for churro lovers craving a cookie twist!

Ingredients

Scale

For the Cinnamon Sugar Coating:

  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon

For the Cookie Dough:

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup shortening
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon kosher salt
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon

For the Cinnamon Buttercream Frosting (Optional):

  • ¾ cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • ⅓ cup light brown sugar, packed
  • 1½ teaspoons cinnamon
  • 23 teaspoons whole milk (to adjust consistency)

Instructions

  1. Preheat oven to 325°F (163°C). Line 2 baking sheets with parchment paper.
  2. Mix the cinnamon sugar coating in a small bowl and set aside.
  3. In a large bowl, cream together softened butter, shortening, and granulated sugar until light and fluffy.
  4. Add eggs and vanilla extract. Mix until smooth and well blended.
  5. In a separate bowl, whisk together flour, cornstarch, salt, baking powder, and ground cinnamon.
  6. Gradually mix the dry ingredients into the wet mixture until fully combined.
  7. Scoop dough (about ¼ cup per cookie), slightly flatten, and roll each in the cinnamon sugar coating.
  8. Place dough on baking sheets, spacing them about 2 inches apart.
  9. Bake for 12–14 minutes, depending on desired softness. Edges should be set but centers slightly soft.
  10. Let cookies cool completely before adding optional frosting.
  11. For the Buttercream Frosting (Optional): Beat softened butter, powdered sugar, brown sugar, and cinnamon until creamy. Add milk gradually to adjust consistency. Pipe or spread on cooled cookies using a round piping tip.

Notes

These cookies are large and rich, perfect for celebrations or gifting. You can freeze both unfrosted cookies and buttercream separately. Use shortening for a fluffier, more bakery-style texture.
