For the Cookie Dough:

- ½ cup shortening
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon kosher salt
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
For the Cinnamon Buttercream Frosting (Optional):
- ¾ cup unsalted butter, softened
- 3 cups powdered sugar, sifted
- ⅓ cup light brown sugar, packed
- 1½ teaspoons cinnamon
- 2–3 teaspoons whole milk (to adjust consistency)
Instructions
- Preheat oven to 325°F (163°C). Line 2 baking sheets with parchment paper.
- Mix the cinnamon sugar coating in a small bowl and set aside.
- In a large bowl, cream together softened butter, shortening, and granulated sugar until light and fluffy.
- Add eggs and vanilla extract. Mix until smooth and well blended.
- In a separate bowl, whisk together flour, cornstarch, salt, baking powder, and ground cinnamon.
- Gradually mix the dry ingredients into the wet mixture until fully combined.
- Scoop dough (about ¼ cup per cookie), slightly flatten, and roll each in the cinnamon sugar coating.
- Place dough on baking sheets, spacing them about 2 inches apart.
- Bake for 12–14 minutes, depending on desired softness. Edges should be set but centers slightly soft.
- Let cookies cool completely before adding optional frosting.
- For the Buttercream Frosting (Optional): Beat softened butter, powdered sugar, brown sugar, and cinnamon until creamy. Add milk gradually to adjust consistency. Pipe or spread on cooled cookies using a round piping tip.
Notes
These cookies are large and rich, perfect for celebrations or gifting. You can freeze both unfrosted cookies and buttercream separately. Use shortening for a fluffier, more bakery-style texture.
