Ingredients
Scale
- 3 1/2 cups shredded zucchini
- 1/8 tsp plus 1/4 tsp salt
- 1/4 cup masa harina flour
- Finely shredded cheddar cheese
- Grated parmesan
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1 egg
Instructions
- Preheat your oven to 400°F (200°C).
- Shred the zucchini, then sprinkle with salt to draw out excess moisture. Let it sit for 10 minutes.
- Squeeze the zucchini to remove as much water as possible.
- In a mixing bowl, combine the zucchini with masa harina flour, cheddar cheese, parmesan, garlic powder, and cumin. Add the egg and mix until well incorporated.
- Line a baking sheet with parchment paper, and spoon the mixture into 6-inch rounds, spreading them evenly.
- Bake for 15–20 minutes or until the edges are golden and the shells are firm to the touch.
- Let the shells cool slightly before using them with your favorite fillings.
Notes
- For a crispier shell, try baking longer or set a broiler for a minute or two while keeping a close eye to prevent burning.
- Squeeze out all moisture from the zucchini to avoid soggy shells.
- Add herbs like oregano or thyme for additional flavor.
