- 1 cup fresh peaches, peeled and chopped
- ½ cup vegetable oil
- ½ cup granulated sugar
- 2 eggs
- ½ cup sour cream (or Greek yogurt)
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease one large loaf pan or four mini loaf pans.
- Combine Wet Ingredients: In a large bowl, mix together the chopped peaches, vegetable oil, sugar, eggs, sour cream (or yogurt), and vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Combine: Gradually add the dry ingredients into the wet mixture, stirring just until combined. Do not overmix.
- Bake: Pour the batter into the prepared pan(s). Bake for 50–55 minutes for a large loaf, or 25–30 minutes for mini loaves, or until a toothpick inserted comes out clean.
- Cool: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Try adding cinnamon or chopped nuts to the batter for a twist. This bread freezes well—wrap tightly and store up to 3 months. Delicious served with butter or a drizzle of honey.
