Description

A moist and flavorful peach bread made with fresh peaches, sour cream, and a hint of vanilla. Perfect for breakfast, brunch, or a sweet afternoon snack—easy to bake as a large loaf or mini loaves.


Ingredients

  • 1 cup fresh peaches, peeled and chopped
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • 2 eggs
  • ½ cup sour cream (or Greek yogurt)
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease one large loaf pan or four mini loaf pans.
  2. Combine Wet Ingredients: In a large bowl, mix together the chopped peaches, vegetable oil, sugar, eggs, sour cream (or yogurt), and vanilla extract.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Combine: Gradually add the dry ingredients into the wet mixture, stirring just until combined. Do not overmix.
  5. Bake: Pour the batter into the prepared pan(s). Bake for 50–55 minutes for a large loaf, or 25–30 minutes for mini loaves, or until a toothpick inserted comes out clean.
  6. Cool: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Try adding cinnamon or chopped nuts to the batter for a twist. This bread freezes well—wrap tightly and store up to 3 months. Delicious served with butter or a drizzle of honey.
